Pea Mint & Watercress Soup

  • 25g butter
  • 2 onions chopped
  • 1 clove of garlic
  • 250g green peas
  • 100g watercress (washed well)
  • 2tblspns chopped mint
  • 850ml good vegetable stock
  • Seasoning
  • Double Cream

 

  1. Melt butter and fry onion for approx. 5 minutes
  2. Add chopped garlic for 1 minute
  3. Add watercress , peas, mint, veggie stock and seasoning
  4. Boil then simmer for 10 mins approx.
  5. Whizz soup in a blender
  6. Re-heat and add cream to taste
