Red wine Chocolate Pie

  • 3/4 cup digestive biscuits
  • 3/4 cup ginger nuts biscuits
  • 1/4 cup brown sugar
  • 5 tabs butter melted
  • 1 cup double cream
  • 3/4 cup Merlot
  • 1 tab instant coffee
  • 1 tab cocoa powder
  • 1/4 cup sugar¼
  • 2 x 4oz bars of 70% chocolate
  • 1/4 cup butter

GARNISH

  • Grated chocolate
  • Double cream

 

  1. Pre heat oven to 190°C/Reg 6
  2. Crush biscuits together, add sugar and melted butter
  3. Press into 9 inch pie pan
  4. Bake in oven for 6-8 mins, then leave to cool.
  5. Place chocolate & butter in a pan and just melt but do let bubble
  6. In another pan heat cream & Merlot until hot and just starting to bubble
  7. Remove wine mixture from heat add and mix in coffee, cocoa & sugar until smooth
  8. Pour mixture over chocolate and butter and whisk until smooth
  9. Put all over cooled biscuit bas.
  • Garnish with grated chocolate and serve with stiff cream
