Red wine Chocolate Pie
This is a chocoholics dream!
Pre heat oven to 190°c fan 170°c – 375°f - Reg 5
Crush biscuits together, add sugar and melted butter
Press into 23cm pie pan
Bake in oven for 6-8 mins, then leave to cool.
Place chocolate & butter in a pan and just melt but do let bubble
In another pan heat cream & Merlot until hot and just starting to bubble
Remove wine mixture from heat add and mix in coffee, cocoa & sugar until smooth
Pour mixture over chocolate and butter and whisk until smooth
Put all over cooled biscuit base.
Garnish with grated chocolate.
Do not let the chocolate get too hot it just doesn't work!
Serve with whipped cream
75g cup digestive biscuits
75g ginger nuts biscuits
50g brown sugar
75g butter melted
240ml double cream
180ml cup Merlot
20ml instant coffee
15g cocoa powder
50g cup sugar
2 x 115g bars of 70% chocolate
