Perfect summer salad, we have taken this on picnics delicious


Oven temperature

Pre-heat oven to 175°c/165°c fan – 325°f – Reg 4


  1. Season chicken well drizzle over top and bake in oven for approx. 20 mins until fully cooked through.. Leave to cool completely

  2. Fry bacon until crisp, c

  3. Coat bread with oil and fry to make croutons

  4. Make dressing

  5. Finely grate parmesan, mince garlic and chop anchovies 

  6. Put all dressing ingredients except mayonnaise and cream in small bl;ender and whizz until smooth

  7. Add mayonnaise and cream and give one last mix take out and put in fridge to cool.

  8. Chop lettuce

  9. Slice chicken breasts and assemble all ingredients either on separate plates or one serving dish.

  10. Sprinkle crispy bacon and croutons over the top and finish with a generous dollop of dressing and finely grated cheese

Cooks tips

When cooking chicken keep an eye on them you do not want them to overcook and so dry out. You can coat the chicken in a seasoning before cooking to add extra taste to the salad

  • 200ml good quality mayonnaise

  • 50ml cream

  • 1 tab Dijon mustard

  • Zest and juice of 1 lemon

  • 25g parmesan

  • 50g tin of anchovies in oil

  • Garlic clove

  • Seasonings

  • Croutons (2 slices of bread)
