Introduction

Its bright flavour is the highlight of this easy pesto pasta recipe, packed with cherry tomatoes and chicken.

Preparation

  1. Peel and mince garlic

  2. Toast the almonds lightly.

  3. Grate cheese

Instructions

  1. Blend most of the basil (keep a little for garnish), 100g of Parmesan cheese, garlic and toasted almonds until smooth this is your pesto.

  2. Cook penne until al dente and liquid are almost absorbed. Remove from heat.

  3. Add pesto; stir in chicken and tomatoes; cook over medium for 2 to 3 minutes or until thoroughly heated.

  4. Garnish with reserved basil and Parmesan cheese.

Cooks tips

I prefer to use fresh pasta but dried makes a fine dish

Add a green salad and French bread.
