Introduction

This is a simple dish but with delicate flavours and perfect for those warm Summer evenings

Steps

  1. Mince the garlic and chop the basil.

  2. Make the marinade by combining the garlic, oil, basil, parsley lemon juice and seasonings mix well together.

  3. Put the fish in a plastic bag and pour in the marinade. Make sure the filets are fully covered and put in the refrigerator for approx. 1 hour turn now and then to make sure the marinade is covering all the

  4. If the weather permits light up the BBQ. Or warm a little oil on a skillet on the hob.

  5. Remove halibut filets from marinade and pat dry with a paper towel.

  6. Cook the filets approx. 5 minutes per side, until fish is just cooked through and easily flaked with a fork.

Cooks tips

Do not leave the marinade on too long as it will over-pawer the fish rather than enhancing the flavours.

Serve with

new potatoes and green salad
