Lamb Shanks with Red Wine Jus

Perfect Winter dish - once in the oven all the work is done so relax and enjoy the aromas coming from your cooker!


Oven temperature

180°c fan 160°c – 350°f – Reg 4


  1. Chop all vegetables 

  2. Wipe over shanks with paper and season well

  3. Heat oil and brown each shank and remove from pan

  4. Add chopped onion and garlic to pan and fry until just becoming soft add rest of vegetables and fry for a further 5 minutes

  5. Add red wine, stock, tomatoes, paste and Bouquet Garni stir all together and let simmer

  6. Put the shanks back in pot, add a layer of foil under lid to get a really tight closure.

  7. Place in oven for 1hr 30 mins – 2 hrs until shanks completely cooked and just holding onto the bone.

  8. Remove lamb and blend/whizz the sauce check for seasonings. Re-heat and serve poured over the shanks.

You can make the majority of this dish in advance have it all prepared and ready to put in the oven, so easy for entertaining.

Serve with

With such a delicious sauce serve just add to some creamy mashed potato or cauliflower puree..

  • 1 Bottle Full bodied Red Wine

  • 1 x Can tomatoes

  • 3tabs tomato paste

  • 750ml Stock

  • Bouquet Garni
