Introduction

Christmas tradition roast turkey is great, but this recipe is superb for using up leftovers. Change the recipe by adding cooked turkey after your sauce is made.

Preparation

  1. Peel and chop the garlic cloves and ginger.

  2. Peel and chop onion.

  3. Chop turkey breast into chunks

  4. Halve cherry tomatoes.

  5. Chop coriander and slice chili

Instructions

  1. In a cold frying pan add half the oil, garlic shavings, and ginger sticks, heat until sizzling, and continue cooking stirring until the garlic and ginger are brown take out put on some kitchen towel, and sprinkle with salt flakes.

  2. Add the rest of the oil to the pan and add the onion until it is soft then add tomatoes and chili flakes (go careful you don’t want too much chili).

  3. Add the turkey and turn it until the meat is sealed, add stock, fish sauce, soy sauce, lime juice, and honey stir together, and allow to simmer for about 20 minutes until the turkey pieces are just cooked.

  4. Add half of fried ginger and garlic to the dish.

  5. Then serve with rice, and top with the rest of the fried garlic and ginger, sprinkle coriander and chili slices over the top.

Cooks tips

This is a great recipe to use with cooked turkey. Cook as above but reduce the time once the sauce is made and the turkey is added so it doesn’t dry out.

  • 1 tsp soy sauce

  • 1 tsp honey
