Great summer BBQ dish

Oven temperature

Pre heat Grill or BBQ,


  1. Drain pineapple chunks

  2. Put vinegar, sugar, pineapple juice and corn flour mixed with water to saucepan, bring to boil then simmer until sauce thickens and cooks

  3. Cut pepper into 24 pieces

  4. Chunk chicken thighs to make 24 pieces

  5. Put pepper, chicken and pineapple chunks onto skewers

  6. Season well

  7. Add a little oil to half prepared sauce and brush over skewers if possible, do this in advance of cooking.

  8. Heat grill or BBQ skewers until chicken completely cooked.

  9. Serve with other half of sauce for dipping

Cooks tips

Marinate chicken well in advance to enhance the flavours and also great if you intersperse peppers, onions and mushrooms with the chicken chunks

Serve with

Rice but if having a BBQ, a new potatoes and simple green salad

  • 200g tine of pineapple chunks

  • 1-tab corn flour mixed

  • 1-tab water

  • 500g boneless chicken thighs

  • 1 red pepper

  • Seasonings

  • 8 skewers
