Oven temperature

Pre heat Grill or BBQ


  1. Place mince in bowl and season well.

  2. Add cream, garlic, herbs and berries to mince and combine

  3. Gently shape into 4 burgers

  4. Make a hole in top of each one and add generous portion of cheese, mould again so meat seals cheese in

  5. Fry shallots until cooked and crispy

  6. Ideally BBQ the burgers but if not possible cook in a griddle until meat cooked and cheese melted.

Cooks tips

Homemade burgers need more care on the BBQ so you could add a beaten egg to help bind together stop them breaking up while turning on the BBQ

Burger bun and simple green salad

  • 650g Venison mince (any good butcher should have this)

  • 5 tabs double cream

  • 2 cloves of garlic-chopped

  • Parsley chopped

  • Chives chopped

  • 4 Crushed Juniper berries

  • Seasoning

  • 200g blue cheese

  • 16 shallots sliced

  • Olive oil for frying
