These cookies are lovely by themselves but I use them as an accompaniment to desserts
180°c fan 160°c – 350°f – Reg 4
Either in a mixer or by hand, cream butter, salt and sugar until very light and fluffy
Add egg yolks slowly until all combined
Add vanillas essence and mix
Add flour and combine until fully incorporated
Put dough in cling film in the fridge for over an hour. (you can shape into a roll before putting in fridge – then you can cut into slices)
Now shape the biscuits into the size you want.
Put the biscuits on a lined baking sheet and bake for approx. 12 minutes until just brown.
Leave to cool and crisp up!
Make sure the butter is very soft as it makes the first stage of creaming ingredients together so much easier

Pinch of salt
100g caster sugar
2 egg yolks
2tsp vanilla extract
Serves – Makes about 40 biscuits depending on cutter size
