Goat's Cheese and Red Pepper Muffins

200°c/fan 180°c - 450°f – Reg6
Steps
Preparation
Line a 12-hole cupcake tin with cupcake cases
Beat egg
Grate Cheddar cheese
Wipe, deseed and chop red pepper into small chunks
Wipe and finely chop spinach and chives
Melt butter
.
Instructions
In a bowl, mix all of the ingredients, except the goat’s cheese, with a wooden spoon.
Once combined, add 40g of the goat’s cheese and mix again.
Divide the mixture between the cases and dot with the remaining goat’s cheese.
Bake in the oven for 15 mins, until risen, golden and cooked through.
Leave to cool on a wire rack.
Cooks tips
Make in advance and warm in the oven perhaps add a little more goat’s cheese to garnish tops
