Goat's Cheese and Red Pepper Muffins

Introduction

These are great on their own served warm or use as an accompaniment to soups

Oven temperature

200°c/fan 180°c - 450°f – Reg6

Steps

Preparation

  1. Line a 12-hole cupcake tin with cupcake cases

  2. Beat egg

  3. Grate Cheddar cheese

  4. Wipe, deseed and chop red pepper into small chunks

  5. Wipe and finely chop spinach and chives

  6. Melt butter

.

Instructions

  1. In a bowl, mix all of the ingredients,      except the goat’s cheese, with a wooden spoon.

  2. Once      combined, add 40g of the goat’s cheese and mix again.

  3. Divide      the mixture between the cases and dot with the remaining goat’s cheese.

  4. Bake      in the oven for 15 mins, until risen, golden and cooked through.

  5. Leave      to cool on a wire rack.

Cooks tips

Make in advance and warm in the oven perhaps add a little more goat’s cheese to garnish tops

· 115ml semi-skimmed milk

· 20g cheddar cheese

· 1 red pepper

· 50g baby spinach

· 1½ tbsp chives

· 60g soft goat’s cheese
