When you have a glut of zucchini from the garden this is a lovely fresh salad.

Steps

Preparation

  1. Finely slice zucchini

  2. Chop apple into small pieces and put in water with some lemon juice to prevent browning.

  3. Finely slice fennel

  4. Slice spring onions

  5. Halve grapes

Instructions

  1. Once all the vegetables and fruit are prepared make the dressing

  2. Use zest and juice from one lemon and add twice the volume of olive oil put in a jar and shake until fully combined.

  3. Pour over the chopped items and garnish with chopped chives

Cooks tips

Make the salad in advance as it improves the flavour put in the refrigerator but take out about an hour before you serve.
