Leek and Potato Soup

This is so easy to make and a great soup to warm you on a winter’s day!

Instructions
Peel and slice potatoes
Wash leeks and slice into chunks
Soak sprigs of thyme in boiling water.
Put all the ingredients into a pan and bring to a boil, lower to a simmer for approx. 10 minutes until the potatoes are cooked but not mushy. (use some of the thyme water to make us your vegetable stock)
Place in liquidizer and whizz until smooth.
Adjust seasoning and add more milk if the soup is a little too thick.
Cooks tips
To clean leeks keep the root on and slice down through the centre. Then wash them under the cold tap making sure all the mud which collects between the layers is washed away
Serve with
Thick slices of toast made into soldiers
