Pea Mint & Watercress Soup - V
4 - 6 servings
A great soup to make during the summer - even on a hot day the flavours are fresh.
Melt butter and fry onion for approx. 5 minutes.
Add chopped garlic for 1 minute.
Add watercress, peas, mint, veggie stock and seasoning.
Boil then simmer for 10 mins approx.
Whizz soup in a blender.
Re-heat and add cream to taste.
Very easy recipe make sure you do blend it well otherwise the watercress can be stringy

1 clove of garlic
250g green peas
100g watercress (washed well)
2tblspns chopped mint
850ml good vegetable stock
