Spicy Chorizo & Cannellini Bean Soup
A filling warming soup perfect to come home to after a Winter walk!
Heat oil add sausage, chilli, pepper and garlic, on medium heat until oils start coming out of chorizo.
Add beans, tomato, stock and half herbs.
Boil then simmer gently for 5-10 minutes.
Adjust seasoning (if a little sharp add small amount of sugar).
Serve in warm bowls with rest of herbs & shredded Parmesan.
Do not over cook the chorizo as it will go hard and lose its flavour
Crusty bread rolls
1 tab olive oil
1 x red chilli
1 x red pepper
Garlic clove minced
300g cannellini beans
400g chopped tomatoes
Seasoning to taste
Fresh parsley & basil chopped
1 tab parmesan
