  1. If you don’t buy a salted caramel sauce follow the recipe below and make in advance so it has time to cool completely.

  2. Pour the cream and vanilla into a bowl and whisk to soft peaks

  3. Separate the eggs and whip the yolks util they are really creamy.

  4. Fold the cream mixture into the egg yolks.

  5. Whisk the egg whites until in soft peaks then gradually add the sugar until thick and glossy.

  6. Fold the egg white mixture into the cream and eggs.

  7. Swirl the caramel mixture into the cream to give a marble effect.

  8. Freeze 

Cooks tips

Take out of the freezer in plenty of time so not so frozen you can’t scoop it out.
