Introduction

Intro: This fish dish is one of my 'go to' dishes for a quick supper for those unexpected visitors. Easy to prepare and uses store cupboard ingredients (I always have salmon steaks in the fridge)

Oven temperature

Preheat oven to 200°c fan 180°c – 400°f -Reg 6

Steps

  1. Chop pistachio’s add breadcrumbs and both cheeses and mix together

  2. Grease with butter oven proof dish and lay salmon portions in

  3. Add 1 tab of water, lightly season and sprinkle with nutmeg

  4. Sprinkle over pistachio mixture evenly over salmon 

  5. Cover lightly with foil and bake for 10 minutes

  6. Remove the foil and bake uncovered for approx. 2 minutes (do not overcook the fish)

Cooks tips

Don't let the fish overcook you should be just be able to flake it easily to enjoy this dish at it's best

  • 100g unsalted shelled pistachios

  • 50g breadcrumbs

  • 25g Parmesan grated

  • 25g Gruyèr grated

  • 50g soften butter

  • 4 portions of fresh salmon

  • Seasonings

  • Pinch of freshly grated nutmeg
