Steps

  1. Core and deseed pepper, trim, clean and chop celery, thinly slice spring onions.

  2. Slice sausage into mouth sized chunks

  3. Melt butter in a heavy-bottomed pot with lid, add sausage and cook for 5 mins add all seasonings and spices and cook for further minute until aromatic

  4. Add tomatoes and cook, add rest of vegetables and mix well

  5. Stir in the brown rice and mix. Add stock mix and get to a simmer

  6. Reduce heat and tightly cover – cook for 45 minutes every now and then give it a stir and check rice isn’t over cooked

  7. Finely add the prawns and cook until pink and translucent. Adjust seasonings and serve.

Cooks tips

Always use a good quality sausage from a butcher or chorizo is great in this recipe.

  • 1 tab smoked Paprika

  • 1 tab ground cumin

  • ½ tspn cayenne pepper

  • ½ tspn black pepper

  • 1 tspn salt

  • 200g canned tomatoes

  • 1 green pepper

  • 2 sticks of celery

  • 4 spring onions

  • 200g brown rice

  • 700ml chicken stock

  • 400g uncooked prawns
