This potato salad is very creamy and best when new potatoes when they are first in the shops. The dressing is very simple so does not overtake the beautiful taste of English new potatoes
Boil potatoes in lightly salted water with a sprig of fresh mint, for approx.. 20 minutes. DO NOT OVERCOOK you want them to just have a little bite and not mushy at all/
Chop the spring onions
Zest and juice the lemon, mince the garlic
Add all the dressing ingredients together add seasonings to taste.
Mix the cooked potatoes, chopped onions and dressing together and serve.
Garnish with tops of spring onions and I use a few mint leaves chopped.
You can cook the potatoes and make the dressing in advance and keep in the refrigerator. Mix them together about an hour before you want to serve them.
