Potato Soup

Introduction

We have a glut of carrots from the allotment so I making soups now in the Autumn to freeze and enjoy in the cold Winter months!

Preparation

  1. Peel & chop onion, garlic, carrots and potato

  2. Chop coriander

Instructions

  1. Melt button add onion and stir until soft add garlic for 1 minute

  2. Add carrot, potato, turmeric and seasoning mix all together for 2 minutes approx.

  3. Add stock, stir bring to the boil then reduce to simmer for 30 minutes until the vegetables are tender

  4. Put the majority of coriander into the soup – keep a little back to garnish

  5. Serve soup in warm bowls garnished with cream and paprika

Cooks tips

I add a small amount of turmeric to this recipe it has so many good qualities and it gives the soup a lovely colour.

Ingredients

  • 25g butter

  • 1 large onion – chopped

  • 1 clove garlic - chopped

  • 10 medium carrots - cleaned and chopped

  • 1 medium potato – peeled and chopped

  • 1 ltr vegetable stock

  • 1 tspn turmeric

  • 30g fresh coriander

  • Seasonings

  • 40 ml Single cream

  • Paprika to garnish
